Tamarind is the main ingredient that gives the chutney its distinct tart taste. To sweeten the recipe and balance out the sourness, we add jaggery, raisins, and Mellon seeds. So, the overall flavor profile is a combo of sweet and sour -- just what tastes best with crispy snacks. Lastly, we have also treated it with ground ginger powder, which is why you can also call it saunth chutney.
