🥕 Ingredients (Serves 4)
- Toor dal (Tur dal) – ¾ cup (about 180 g)
- Turmeric powder – ¼ tsp
- Mixed vegetables, diced – 2 cups (carrot, beans, drumstick, pumpkin, etc.)
- Tamarind – lemon-sized ball (about 2 tbsp extract)
- Salt – 2 tsp, or as per taste
- Homemade Love Sambar Powder – 2 tsp 😊
- Oil – 1 tbsp
- Mustard seeds – 1 tsp
- Hing (asafoetida) – a pinch
- Dry red chillies – 2
- Curry leaves – 1 sprig
🍲 Method

Cook the dal and vegetables
Wash the toor dal well and add it to a pressure cooker along with the diced vegetables, turmeric, 3 cups of water, and 1 tsp of oil.
Pressure cook for 1–2 whistles (depending on your cooker). Allow the pressure to release naturally. -
Prepare the tamarind mix
In a bowl, mix tamarind extract, Homemade Love Sambar Powder, and salt. This helps avoid lumps and ensures the masala blends smoothly into the dal. -
Combine and simmer
Add this mixture to the cooked dal and vegetables. Stir well and bring to a gentle boil. Add more water if required to adjust the consistency. Let it simmer for about 5 minutes, stirring occasionally. -
Prepare the tempering (tadka)
Heat oil in a small pan. Add mustard seeds and let them splutter. Then add hing, red chillies, and curry leaves. Let them sizzle until fragrant. -
Add the tadka and finish
Pour this hot tempering over the simmering sambar. Switch off the stove, give it a good stir, and cover it for a few minutes to let the flavours settle beautifully.
